Title: Special Smokin project = success
Post by: BuffaloParrot on July 30, 2012, 05:48:51 pm
About a week ago they had big ole chuck roasts on sale so I started thinkin   So what I did was whipped up a corned beef brine recipe and cured it for 4 days.  I then smoked it with hickory for 3 hours on very low heat, then simmered it in water for 3 more hours like you would do a normal corned beef brisket.  Turned out damned good, though I have never heard of anyone doing a chuck roast in this manner.  Was not quite as tender as a normal corned beef but very close and I thought the flavor was much better, with the smoke process and all.  More of a leaner more flavorful corned beef.

Sounds like a movie trailer: D the story about the bond between a man and his smoker....or is it about a man and his meat?

Now that ya' have a 2nd smoker, there will be no stopping you!! :Oh:

I think while Mar is doing a head count, she should be stopping by the neighborhood & asking if anyone has pets missing. :dknow:

Wait, tozie...has anyone heard from Mar lately? :deer: :oopse5:

:thumb: :laffhrd:....head count is fine!  We have smoked meat coming out our ears though :cstars:  Tasted just like corned beef at St. Patty's time. :dinner:  Too bad the flood destroyed our huge freezer in the dungeon basement.....we could have filled that up enough to live for years!
