About a week ago they had big ole chuck roasts on sale so I started thinkin  think  So what I did was whipped up a corned beef brine recipe and cured it for 4 days.  I then smoked it with hickory for 3 hours on very low heat, then simmered it in water for 3 more hours like you would do a normal corned beef brisket.  Turned out damned good, though I have never heard of anyone doing a chuck roast in this manner.  Was not quite as tender as a normal corned beef but very close and I thought the flavor was much better, with the smoke process and all.  More of a leaner more flavorful corned beef.

 mar!  weirdo3  have you checked on zeus?? done a head count on the fids?? just do me a favor and monitor what that man is shoving in the smoker, okay?  confused   <wanders off to eat more chocolate cake>

Ya'all are too funny  :deer:  Tomorrow, yes tomorrow I have a BIG split turkey breast and 3 big split chicken breasts I will smoke and I will attempt to fuse them into a giant turcken breast  smile3

 thumb laffhrd....head count is fine!  We have smoked meat coming out our ears though :cstars:  Tasted just like corned beef at St. Patty's time. dinner  Too bad the flood destroyed our huge freezer in the dungeon basement.....we could have filled that up enough to live for years!
