Great birthday today with me best bro and x bro in law. We brined cured and smoked a fresh ham today. 7 plus hours to do this not including the brine and cure which takes days. Was not perfect but overall was good and the first 1 1/2 inch actually tasted like ham! Seeing this was the first time, and did not have the days to fully brine/cure we did this, and we now know how to go full ham next time. Could not have asked for a better birthday than to spend it with him on an all day smoke fest and a good fire ta boot. He is my best friend even though we may be x bro in laws. Here is a few pics of the fest and we also had a bread bowl, deviled eggs, and hand made hand shredded coleslaw. In and ready to smoke at 10:15 this AM In the smoker Lightin another batch of coals. :lol:Laila! You GO girl!!! Looks like a really good meal. I must say I like the looks of the ham after the smoking. The grill, not the guys. Maybe we need a thread just for Laila. How to get by with stealing food and get invited back to the next BBQ!

Laila greeted me by nearly knocking me over with her paws on my shoulders, a big smooch and scratches down my chest She's a pretty tall pup...shortish for a person, tall for a pup! :twirl: She even took a little dip in her kiddy pool and drank the water in it! The outer part of the meat was just like your average smoked ham you get in the store. D had said he wanted to be the official ham maker for holiday's...wonder if he still feels that way with all that work that goes into it! That's a heck of a long process!

d im glad your birthday bash was fun but... ya'll keep saying 'the outer part tasted like ham" so what did the rest taste like? cow? peanut butter??? i'm so confused. i've never been able to eat ham, even as an infant, mom said i would barf if offered even a taste.

The outer part tasted like "ham"...the inner part was more like pork roast...pork chop. So the inner part didn't get as much of the "brine" flavor....salt. think of making homemade pickles and you have to soak them forever.

Exactly right and knew this would be the case as I did not have enough days to fully brine/cure. I am just happy my brine was correct and some of it tasted just like ham. :twirl: Next time it will be brined much longer and smoked/cooked a little longer. Maybe try and get a smaller ham next time.
